Salmon
- 2 salmon fillets (about 150–200g each)

Wrap Ingredients
- 2–3 large whole wheat or spinach tortillas/flatbreads
- 2 cups fresh arugula
- ½ cucumber, sliced thin
- 1 small tomato, sliced
- ¼ red onion, thinly sliced

Lemon Dressing
- 2 tbsp olive oil
- 1 tbsp lemon juice
- ½ tsp Dijon mustard
- 1 clove garlic, minced
