  • 3 medium zucchinis, sliced into thin rounds

  • 1 cup shredded cheddar cheese

  • ½ cup mozzarella cheese

  • ½ cup sour cream or Greek yogurt

  • ¼ cup cream cheese, softened

  • ½ cup turkey bacon or beef bacon, cooked and crumbled (optional)

  • 2 cloves garlic, minced

  • ¼ cup green onions, chopped

  • 1 tablespoon olive oil

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon paprika


Optional Topping

  • ¼ cup breadcrumbs

  • 2 tablespoons Parmesan cheese

  • 1 tablespoon melted butter


Instructions

1. Preheat the Oven

Preheat oven to 190°C (375°F).
Lightly grease a baking dish.


2. Prepare the Zucchini

  • Slice zucchini into thin rounds.

  • Place them on paper towels and sprinkle lightly with salt.

  • Let sit for 10 minutes to release excess moisture, then pat dry.

(This step helps prevent a watery bake.)


3. Make the Creamy Mixture

In a bowl mix together:

  • sour cream or Greek yogurt

  • cream cheese

  • garlic

  • paprika

  • black pepper

  • half of the cheddar and mozzarella

Stir until smooth and creamy.


4. Assemble the Bake

  1. Spread zucchini slices evenly in the baking dish.

  2. Drizzle with olive oil.

  3. Spoon the creamy cheese mixture over the zucchini.

  4. Sprinkle the remaining cheddar and mozzarella.

  5. Add crumbled bacon and green onions.


5. Add Optional Crunchy Topping

Mix:

  • breadcrumbs

  • Parmesan

  • melted butter

Sprinkle evenly over the top.


6. Bake

Bake for 25–30 minutes until:

  • zucchini is tender

  • cheese is melted and bubbly

  • topping is golden.


7. Serve

Let it cool for 5 minutes, then serve warm.


Optional Add-Ins

You can make it even more loaded with:

  • mushrooms

  • bell peppers

  • spinach

  • shredded chicken

  • jalapeños for spice


Tips

  • Use firm zucchini so it holds shape while baking.
