Honey Lime Chicken & Avocado Rice Stack

🧾 Ingredients
For the Honey-Lime Chicken
2 boneless skinless chicken breasts, diced or sliced
2 tbsp honey
2 tbsp fresh lime juice
2 cloves garlic, minced
1 tsp paprika
½ tsp cumin
½ tsp salt
½ tsp black pepper
1 tbsp olive oil
For the Cilantro-Lime Rice
1 cup white rice or jasmine rice
2 cups water or chicken broth
1 tbsp lime juice
2 tbsp fresh cilantro, chopped
¼ tsp salt
For the Avocado Layer
1 ripe avocado, diced
1 tbsp lime juice
¼ tsp salt
1 tbsp chopped cilantro
Optional Toppings
Diced tomatoes
Shredded carrots
Corn kernels
Extra lime wedges
👨🍳 Instructions
1. Cook the Rice
Rinse the rice under cold water.
In a pot, combine rice, water or chicken broth, and salt.
Bring to a boil, then reduce heat to low, cover, and simmer for 15–20 minutes until tender.
Fluff with a fork and stir in lime juice and chopped cilantro.
2. Prepare the Chicken
In a bowl, mix honey, lime juice, garlic, paprika, cumin, salt, and pepper.
Add chicken and toss to coat. Marinate for 15–30 minutes if time allows.
Heat olive oil in a skillet over medium-high heat.
Cook chicken for 6–8 minutes, stirring occasionally, until fully cooked and lightly caramelized.
3. Prepare the Avocado
In a small bowl, combine diced avocado, lime juice, salt, and cilantro. Mix gently to avoid mashing.
4. Assemble the Rice Stack
Use a ring mold or a small bowl for stacking.
Layer rice at the bottom and gently press.
Add a layer of honey-lime chicken.
Top with avocado mixture.
Carefully remove the mold to reveal the stacked layers.
5. Garnish & Serve
Add optional toppings: diced tomatoes, corn, shredded carrots, or extra cilantro.
Serve with lime wedges on the side.
