Honey Lime Chicken & Avocado Rice Stack

A colorful, layered bowl featuring tender honey-lime chicken, fluffy cilantro-lime rice, creamy avocado, and fresh veggies. Perfect for a light, flavorful lunch or dinner.


🧾 Ingredients

For the Honey-Lime Chicken

  • 2 boneless skinless chicken breasts, diced or sliced

  • 2 tbsp honey

  • 2 tbsp fresh lime juice

  • 2 cloves garlic, minced

  • 1 tsp paprika

  • ½ tsp cumin

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tbsp olive oil

For the Cilantro-Lime Rice

  • 1 cup white rice or jasmine rice

  • 2 cups water or chicken broth

  • 1 tbsp lime juice

  • 2 tbsp fresh cilantro, chopped

  • ¼ tsp salt

For the Avocado Layer

  • 1 ripe avocado, diced

  • 1 tbsp lime juice

  • ¼ tsp salt

  • 1 tbsp chopped cilantro

Optional Toppings

  • Diced tomatoes

  • Shredded carrots

  • Corn kernels

  • Extra lime wedges


👨‍🍳 Instructions

1. Cook the Rice

  • Rinse the rice under cold water.

  • In a pot, combine rice, water or chicken broth, and salt.

  • Bring to a boil, then reduce heat to low, cover, and simmer for 15–20 minutes until tender.

  • Fluff with a fork and stir in lime juice and chopped cilantro.


2. Prepare the Chicken

  • In a bowl, mix honey, lime juice, garlic, paprika, cumin, salt, and pepper.

  • Add chicken and toss to coat. Marinate for 15–30 minutes if time allows.

  • Heat olive oil in a skillet over medium-high heat.

  • Cook chicken for 6–8 minutes, stirring occasionally, until fully cooked and lightly caramelized.


3. Prepare the Avocado

  • In a small bowl, combine diced avocado, lime juice, salt, and cilantro. Mix gently to avoid mashing.


4. Assemble the Rice Stack

  • Use a ring mold or a small bowl for stacking.

  • Layer rice at the bottom and gently press.

  • Add a layer of honey-lime chicken.

  • Top with avocado mixture.

  • Carefully remove the mold to reveal the stacked layers.


5. Garnish & Serve

  • Add optional toppings: diced tomatoes, corn, shredded carrots, or extra cilantro.

  • Serve with lime wedges on the side.

  • Pairs well with tortilla chips or a light salad.

  • Can be served as a bowl or plated stack for a beautiful presentation.
