- 1 pound sirloin steak (or your preferred cut), cut into bite-sized pieces
- 3–4 cloves garlic, minced
- Salt and pepper, to taste
- 2 tablespoons olive oil, divided
- 4 large eggs
- Fresh herbs (like parsley or chives), chopped for garnish
INSTRUCTIONS
- Prepare the Steak Bites:
- Season the steak pieces generously with salt and pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer, working in batches if necessary to avoid overcrowding the pan.
- Cook the steak bites for about 2-3 minutes per side, or until they are browned and cooked to your desired doneness.
- In the last minute of cooking, add the minced garlic to the pan and sauté with the steak bites until fragrant. Remove the steak and garlic from the pan and set aside.
- Cook the Eggs:
- In the same skillet, add the remaining tablespoon of olive oil and reduce the heat to medium.
- Crack the eggs into the pan and cook to your liking, whether you prefer them sunny-side up, over-easy, or scrambled.
- Serve:
- Serve the garlic steak bites alongside the cooked eggs. Garnish with fresh herbs.
