Juicy Stuffed Chicken Breast

Ingredients

For the Chicken

  • 2–4 large chicken breasts

  • 1–2 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp salt (adjust to taste)

  • ½ tsp black pepper

  • ½ tsp dried Italian herbs (optional)

For the Stuffing

  • 1 cup fresh spinach (or ½ cup frozen, thawed & drained)

  • ½ cup cream cheese (softened)

  • ½ cup shredded mozzarella (or cheddar, or a mix)

  • ¼ cup grated Parmesan

  • 2 garlic cloves, minced

  • Salt & pepper to taste

  • Optional add-ins:

    • 4–6 chopped sun-dried tomatoes

    • ¼ cup sautéed mushrooms

    • 2 tbsp chopped cooked bacon


Instructions

1. Prepare the Chicken

  1. Preheat oven to 400°F (200°C).

  2. Place chicken breasts on a cutting board.

  3. Using a sharp knife, slice a deep pocket on the thickest side of each breast.

  4. Drizzle with olive oil.

  5. Season both sides with:

    • paprika

    • garlic powder

    • onion powder

    • salt

    • pepper

    • Italian herbs (optional)


2. Make the Stuffing

  1. In a bowl, mix together:

    • cream cheese

    • spinach

    • mozzarella

    • Parmesan

    • garlic

    • salt & pepper

  2. Stir until smooth and fully combined.


3. Stuff the Chicken

  1. Spoon the spinach-cheese mixture into each chicken breast pocket.

  2. Use toothpicks to secure the opening so the filling doesn’t leak out during cooking.


4. Cook the Chicken

Option A: Pan-Sear + Bake (Best Result)

  1. Heat a large oven-safe skillet with 1 tbsp oil over medium-high heat.

  2. Sear chicken breasts for 2–3 minutes per side until golden.

  3. Transfer skillet to the oven and bake for 18–22 minutes,
    or until the internal temperature reaches 165°F (74°C).

Option B: Oven-Only

  1. Place stuffed breasts in a greased baking dish.

  2. Bake at 400°F (200°C) for 25–30 minutes.

Option C: Air Fryer

  1. Preheat to 375°F (190°C).

  2. Air fry chicken for 18–22 minutes, turning halfway through.


5. Rest and Serve

  • Remove toothpicks.

  • Let chicken rest 5 minutes before slicing.

  • Serve warm with your favorite sides.

Creamy Mushroom Stuffed Chicken
