Lemon Dijon Chicken Orzo Bowl with Roasted Garlic Feta Yogurt Sauce
🛒 Ingredients
For the Lemon Dijon Chicken
1½ lbs boneless skinless chicken breasts (or thighs)
2 tbsp olive oil
2 tbsp Dijon mustard
Zest of 1 lemon
3 tbsp fresh lemon juice
3 cloves garlic, minced
1 tsp dried oregano
1 tsp paprika
½ tsp salt
½ tsp black pepper
For the Orzo Base
1 cup dry orzo pasta
2 cups chicken broth (or salted water)
1 tbsp olive oil
¼ tsp salt
For the Roasted Garlic Feta Yogurt Sauce
1 whole head of garlic
1 tsp olive oil (for roasting)
1 cup plain Greek yogurt
½ cup crumbled feta cheese
1–2 tbsp lemon juice
1 tbsp olive oil
2 tbsp chopped fresh dill (optional)
Salt & pepper to taste
1–2 tbsp warm water (to thin, if needed)
Optional Bowl Toppings
Cherry tomatoes, halved
Cucumber, diced
Red onion, thinly sliced
Kalamata olives
Fresh parsley
Extra feta
Baby spinach or arugula
👩🍳 Instructions
1️⃣ Roast the Garlic
Preheat oven to 400°F (200°C).
Slice the top off the garlic head.
Drizzle with olive oil, wrap in foil.
Roast for 35–40 minutes until soft and golden.
Let cool, then squeeze cloves out.
2️⃣ Marinate & Cook the Chicken
In a bowl, whisk olive oil, Dijon, lemon zest/juice, garlic, oregano, paprika, salt & pepper.
Add chicken and marinate at least 30 minutes (up to 8 hours).
Cook:
Grill: 5–7 min per side
OR Pan-sear: Medium heat, 6–7 min per side
Rest 5–10 minutes, then slice.
3️⃣ Cook the Orzo
Bring broth to boil.
Add orzo and cook 8–10 minutes until tender.
Drain (if needed) and toss with olive oil and pinch of salt.
4️⃣ Make the Feta Yogurt Sauce
In a bowl, mash roasted garlic into paste.
Mix with yogurt, feta, lemon juice, olive oil, dill, salt & pepper.
Blend or whisk until smooth.
Add warm water to reach drizzle consistency.
🥗 Assemble the Bowls
Add orzo to bowl.
Top with sliced chicken.
Add fresh veggies.
Spoon or drizzle feta yogurt sauce generously.
Garnish with parsley and extra feta.

Add roasted zucchini or bell peppers.
Swap chicken for grilled shrimp.
Add a spoonful of hummus.
