Soft, rich, and loaded with banana flavor — perfect for breakfast or dessert!

Ingredients:

1 ½ cups all-purpose flour

1 tsp baking soda

½ tsp salt

½ cup unsalted butter (softened)

¾ cup brown sugar (adds extra moisture)

2 large eggs

1 tsp vanilla extract

3 very ripe bananas, mashed (about 1 to 1¼ cups)

¼ cup sour cream or plain Greek yogurt (adds moisture!)

Optional: ½ cup chopped walnuts, pecans, or chocolate chips


Instructions:

Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.

In a medium bowl, whisk together flour, baking soda, and salt.

In a large bowl, cream together butter and brown sugar until light and fluffy.

Add eggs, vanilla, mashed bananas, and sour cream to the butter mixture. Mix until combined.

Gradually stir in the dry ingredients until just combined (don’t overmix!). Fold in any optional add-ins.

Pour batter into prepared loaf pan and smooth the top.

Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.

Cool in pan for 10–15 minutes, then transfer to a wire rack to cool completely (if you can wait that long 😉).

📝 Tips:

Want extra banana flavor? Add a ¼ tsp banana extract.

Too brown on top? Tent with foil halfway through baking.

Freezes beautifully — just wrap slices tightly.
