Oatmeal, apple and carrots!

Oatmeal, Apple & Carrot Bake (No Sugar, No Flour)
Ingredients
2 cups (200 g) rolled oats, lightly chopped in a blender (not flour-fine)
1 teaspoon baking powder
1 cup (240 ml) milk of your choice (dairy or plant-based)
1 medium carrot, grated
1 medium apple, grated (with peel for extra fiber)
9 dried apricots, rinsed in hot water and finely chopped
4 tablespoons raisins
1 teaspoon cinnamon (optional)
½ teaspoon vanilla extract (optional)
A handful of nuts or seeds (optional, for crunch)

Instructions
1. Preheat oven to 180°C (350°F). Line or lightly grease a small baking dish.
2. In a bowl, combine the oats, baking powder, cinnamon, and (if using) nuts/seeds.
3. In another bowl, mix milk, grated carrot, grated apple, raisins, apricots, and vanilla.
4. Combine wet and dry ingredients. Stir well until everything is evenly coated.
5. Pour mixture into the baking dish and spread evenly.
6. Bake for 30–35 minutes, until set and golden on top.
7. Let cool slightly before slicing.

✅ Storage tip: Keeps in the fridge for up to 4 days, or freeze in portions.
✅ Serving idea: Eat warm as is, or with a spoon of Greek yogurt on top.
