  • Powdered sugar โ€“ ยฝ cup (60 g)

  • Unflavored gelatin โ€“ 1 tbsp (10 g)

  • Cold water (for blooming gelatin) โ€“ 3 tbsp

1๏ธโƒฃ Bloom the gelatin

  • Sprinkle 1 tbsp gelatin over 3 tbsp cold water

  • Let sit 5 minutes until spongy

  • Heat gently (microwave 10โ€“15 sec or over warm water) until fully dissolved
    Do not boil


2๏ธโƒฃ Mix the yogurt base

  • In a large bowl, whisk:

    • 2 cups yogurt

    • ยฝ cup orange juice

    • 1 tbsp orange zest

    • ยฝ cup powdered sugar

    • 1 tsp vanilla

    • Pinch of salt

  • Slowly whisk in the warm dissolved gelatin

  • In a separate cold bowl, whip:

    • 1 cup heavy cream

  • Whip to soft, fluffy peaks (not stiff)

  • Fold whipped cream into yogurt mixture in 3 additions

  • Use a spatula and light motions to keep it airy
