Plain yogurt (Greek or regular, cold) โ 2 cups (480 g)
Fresh orange juice โ ยฝ cup (120 ml)
Orange zest โ 1 tbsp
Heavy whipping cream (cold) โ 1 cup (240 ml)
Powdered sugar โ ยฝ cup (60 g)
(adjust to taste)Vanilla extract โ 1 tsp
Unflavored gelatin โ 1 tbsp (10 g)
Cold water (for blooming gelatin) โ 3 tbsp
Pinch of salt โ โ tsp
๐ฉโ๐ณ Instructions
1๏ธโฃ Bloom the gelatin
Sprinkle 1 tbsp gelatin over 3 tbsp cold water
Let sit 5 minutes until spongy
Heat gently (microwave 10โ15 sec or over warm water) until fully dissolved
Do not boil
2๏ธโฃ Mix the yogurt base
In a large bowl, whisk:
2 cups yogurt
ยฝ cup orange juice
1 tbsp orange zest
ยฝ cup powdered sugar
1 tsp vanilla
Pinch of salt
Slowly whisk in the warm dissolved gelatin
3๏ธโฃ Whip the cloud
In a separate cold bowl, whip:
1 cup heavy cream
Whip to soft, fluffy peaks (not stiff)
4๏ธโฃ Fold gently
Fold whipped cream into yogurt mixture in 3 additions
Use a spatula and light motions to keep it airy
5๏ธโฃ Chill
Spoon into glasses or one serving dish
Chill 2โ3 hours until softly set and cloud-like
