Philly Steak Cheese Fries

Ingredients (Serves 4)

Fries

  • 2 pounds frozen French fries (or fresh-cut fries)

  • Salt, to taste

Steak

  • 1 pound ribeye steak (or sirloin), thinly sliced

  • 1 tablespoon olive oil

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon garlic powder

Veggies

  • 1 green bell pepper, thinly sliced

  • 1 medium onion, thinly sliced

  • 1 tablespoon butter

Cheese Sauce

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 1½ cups milk, warmed

  • 1½ cups shredded provolone cheese
    (or white American cheese for classic Philly flavor)

  • Salt, to taste


Instructions

  1. Cook the fries
    Bake or fry fries according to package directions until golden and crispy.
    Season lightly with salt and set aside.

  2. Cook the veggies
    Heat butter in a skillet over medium heat.
    Add peppers and onions and cook 5–7 minutes until soft and lightly caramelized. Remove and set aside.

  3. Cook the steak
    In the same skillet, heat olive oil over medium-high heat.
    Add steak, season with salt, pepper, and garlic powder.
    Cook 2–3 minutes, stirring frequently, until just cooked. Do not overcook.

  4. Make the cheese sauce
    In a saucepan, melt butter over medium heat.
    Whisk in flour and cook 1 minute.
    Slowly whisk in warm milk until smooth.
    Simmer 2–3 minutes until thickened.
    Reduce heat to low and stir in cheese until melted. Season to taste.

  5. Assemble the fries
    Spread fries on a large serving platter or baking dish.
    Top with steak, peppers, and onions.
    Pour cheese sauce generously over the top.

  6. Optional bake
    Place under broiler 2–3 minutes until bubbly and lightly browned.

  7. Serve immediately

  • Extra cheesy: Add shredded mozzarella or cheddar on top before broiling

  • Spicy: Add jalapeños or hot sauce

  • Shortcut: Use store-bought cheese sauce

  • Loaded version: Top with mushrooms or a drizzle of garlic aioli
