Zero-Carb Carnivore Tortillas (3 Ingredients)
Ingredients (makes 6–8 tortillas)
1 cup liquid egg whites (or whites from ~8 large eggs)
1 tbsp unflavored beef gelatin (or plain gelatin)
¼ cup water
(Salt is optional and usually not counted as an ingredient)
Instructions
Bloom the gelatin
Add gelatin to the ¼ cup water in a small bowl
Let sit for 2–3 minutes until fully absorbed
Dissolve the gelatin
Gently heat the bloomed gelatin (microwave 10–15 sec or stovetop)
Stir until completely liquid — do not boil
Blend
Add gelatin mixture to egg whites
Blend or whisk thoroughly until fully combined and slightly foamy
Cook the tortillas
Heat a non-stick pan on low–medium heat
Lightly grease with tallow or butter (optional)
Pour a thin layer (like a crepe) into the pan
Cook 1–2 minutes until set, then flip
Cook another 30–60 seconds
Cool slightly before using
They firm up more as they cool and become flexible
Tips for Best Results
Low heat is key — too hot makes them brittle
Thinner = more flexible
Stack cooked tortillas under a towel to keep soft
If cracking: add 1–2 tbsp water to the batter next time
