Shrimp and Broccoli Stir Fry in Garlic Sauce
Ingredients:
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
3 cups broccoli florets
1 red bell pepper, sliced
3 cloves garlic, minced
1/4 cup low-sodium soy sauce
1 tbsp oyster sauce
1 tbsp honey or maple syrup
1 tsp sesame oil
1/4 cup chicken or vegetable broth
1 tbsp cornstarch, dissolved in 2 tbsp water
Salt and pepper to taste
Sesame seeds and green onions for garnish (optional)
Directions:
In a large skillet or wok, heat olive oil over medium-high heat. Add shrimp and season lightly with salt and pepper. Cook for 2-3 minutes until shrimp turns pink and opaque. Remove and set aside.
In the same skillet, add broccoli florets, bell pepper, and a splash of broth. Cover and cook for 3-4 minutes until veggies are tender-crisp.
Add minced garlic, stirring until fragrant.
In a small bowl, whisk together soy sauce, oyster sauce, honey, sesame oil, and remaining broth.
Add the sauce to the skillet, followed by the cooked shrimp. Stir in the cornstarch slurry and cook until the sauce thickens, about 2 minutes.
Garnish with sesame seeds and green onions if desired. Serve hot with rice or noodles.
