Slow Cooker Sausage and Cabbage

Ingredients

  • 1½ lbs (680 g) smoked sausage, sliced into ½-inch rounds
  • 1 medium green cabbage, chopped into large pieces
  • 4 medium potatoes, peeled and cubed
  • 1 large onion, sliced
  • 3 carrots, sliced
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)
  • ½ tsp onion powder
  • 2 tbsp butter, cut into small pieces
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Lightly grease the slow cooker with cooking spray.
  2. Add the potatoes, carrots, onion, garlic, and cabbage.
  3. Layer the sliced smoked sausage on top.
  4. Sprinkle with smoked paprika, Italian seasoning, onion powder, salt, and black pepper.
  5. Pour the chicken broth around the edges.
  6. Dot the top with butter.
  7. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the vegetables are tender.
  8. Gently stir before serving and garnish with fresh parsley.

Tips

  • Add a pinch of red pepper flakes for a spicy kick.
  • Use kielbasa, turkey sausage, or chicken sausage as an alternative.
  • Stir in a little shredded cheddar cheese before serving for extra richness.
