Slow Cooker Sausage and Cabbage

Ingredients
- 1½ lbs (680 g) smoked sausage, sliced into ½-inch rounds
- 1 medium green cabbage, chopped into large pieces
- 4 medium potatoes, peeled and cubed
- 1 large onion, sliced
- 3 carrots, sliced
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 tsp smoked paprika
- 1 tsp Italian seasoning
- ½ tsp black pepper
- ½ tsp salt (adjust to taste)
- ½ tsp onion powder
- 2 tbsp butter, cut into small pieces
- 1 tbsp chopped fresh parsley (for garnish)
Instructions
- Lightly grease the slow cooker with cooking spray.
- Add the potatoes, carrots, onion, garlic, and cabbage.
- Layer the sliced smoked sausage on top.
- Sprinkle with smoked paprika, Italian seasoning, onion powder, salt, and black pepper.
- Pour the chicken broth around the edges.
- Dot the top with butter.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the vegetables are tender.
- Gently stir before serving and garnish with fresh parsley.
Tips
- Add a pinch of red pepper flakes for a spicy kick.
- Use kielbasa, turkey sausage, or chicken sausage as an alternative.
- Stir in a little shredded cheddar cheese before serving for extra richness.
