Spicy Fried Plantains (Sweet & Savory)
🕒 Time
Prep: 10 minutes
Cook: 10–15 minutes
Total: 20–25 minutes
🍽 Serves
3–4 as a side
🛒 Ingredients
3 ripe plantains (yellow with black spots for sweetness)
½–¾ cup vegetable oil (for shallow frying)
Spice Mix
1 tsp smoked paprika
½ tsp cayenne pepper (adjust to taste)
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
¼ tsp black pepper
½ tsp brown sugar (optional, enhances caramelization)
Finish
Fresh lime wedges
Optional: pinch of chili flakes or sea salt
👩🍳 Instructions
1️⃣ Choose the Right Plantains
Yellow with black spots = sweet & caramelized (like image)
Mostly black = very sweet, softer texture
Green = starchy, not ideal for this version
2️⃣ Prep the Plantains
Cut off both ends.
Score the peel lengthwise.
Remove skin.
Slice into ½–¾ inch thick rounds.
👉 Thicker slices = softer center.
👉 Thinner slices = crispier.
3️⃣ Make the Spice Blend
In a small bowl, mix:
Paprika
Cayenne
Garlic powder
Onion powder
Salt
Pepper
Brown sugar
Set aside.
4️⃣ Heat the Oil
Heat oil in a heavy skillet over medium heat.
Oil should be about ¼–½ inch deep.
Test by dropping in a small piece — it should sizzle immediately but not smoke.
Ideal temp: 350°F (175°C)
5️⃣ Fry the Plantains
Add slices in a single layer (don’t overcrowd).
Fry 2–3 minutes per side.
Flip when golden brown and caramelized.
Cook until deep golden with slight charred edges.
They should be:
✔ Crispy outside
✔ Soft and creamy inside
6️⃣ Season Immediately
Remove to paper towel-lined plate.
While still hot, sprinkle spice mix evenly.
Toss gently to coat.
Heat activates the spices and helps them stick.
7️⃣ Finish
Squeeze fresh lime over top.
Optional: tiny pinch of flaky salt or extra chili flakes.
🌶 Flavor Profile
Sweet caramelized banana notes
Smoky spice
Slight heat
Citrus brightness
Crispy edges, creamy center
