Spicy Fried Plantains (Sweet & Savory)

🛒 Ingredients

  • 3 ripe plantains (yellow with black spots for sweetness)

  • ½–¾ cup vegetable oil (for shallow frying)

Spice Mix

  • 1 tsp smoked paprika

  • ½ tsp cayenne pepper (adjust to taste)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp brown sugar (optional, enhances caramelization)

Finish

  • Fresh lime wedges

  • Optional: pinch of chili flakes or sea salt


👩‍🍳 Instructions

1️⃣ Choose the Right Plantains

  • Yellow with black spots = sweet & caramelized (like image)

  • Mostly black = very sweet, softer texture

  • Green = starchy, not ideal for this version


2️⃣ Prep the Plantains

  1. Cut off both ends.

  2. Score the peel lengthwise.

  3. Remove skin.

  4. Slice into ½–¾ inch thick rounds.

👉 Thicker slices = softer center.
👉 Thinner slices = crispier.


3️⃣ Make the Spice Blend

In a small bowl, mix:

  • Paprika

  • Cayenne

  • Garlic powder

  • Onion powder

  • Salt

  • Pepper

  • Brown sugar

Set aside.


4️⃣ Heat the Oil

  • Heat oil in a heavy skillet over medium heat.

  • Oil should be about ¼–½ inch deep.

  • Test by dropping in a small piece — it should sizzle immediately but not smoke.

Ideal temp: 350°F (175°C)


5️⃣ Fry the Plantains

  1. Add slices in a single layer (don’t overcrowd).

  2. Fry 2–3 minutes per side.

  3. Flip when golden brown and caramelized.

  4. Cook until deep golden with slight charred edges.

They should be:
✔ Crispy outside
✔ Soft and creamy inside


6️⃣ Season Immediately

  • Remove to paper towel-lined plate.

  • While still hot, sprinkle spice mix evenly.

  • Toss gently to coat.

Heat activates the spices and helps them stick.


7️⃣ Finish

  • Squeeze fresh lime over top.

  • Optional: tiny pinch of flaky salt or extra chili flakes.

🔥 Pro Tips

For Extra Crispiness:

After first fry:

  1. Lightly press each slice.

  2. Fry again 1–2 minutes per side (double-fry method).

For Air Fryer:

  • Toss with 1–2 tbsp oil.

  • Air fry at 375°F for 10–15 minutes, flipping halfway.

  • Season immediately after cooking.

For Savory Garlic Version:

Add 1 tsp minced garlic to oil during last minute of frying.
