Spinach and Cheese Puff Pastry Squares
Ingredients:
1 sheet puff pastry, thawed (store-bought or homemade)
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
5 oz (about 150 g) fresh spinach (or thawed frozen spinach, well drained)
1/2 cup crumbled feta cheese
1/2 cup ricotta or cream cheese
1/4 cup grated Parmesan cheese
1 egg, lightly beaten (for filling)
1 tsp dried oregano (or fresh chopped herbs like dill or parsley)
1/4 tsp black pepper
Pinch of nutmeg (optional, for depth)
1 egg yolk + 1 tbsp water (for egg wash)
Sesame seeds or nigella seeds (optional, for topping)
Instructions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare filling – Heat olive oil in a pan, sauté onion until soft, add garlic, then spinach. Cook until wilted and most moisture evaporates. Remove from heat, cool slightly.
Mix filling – In a bowl, combine spinach mixture with feta, ricotta (or cream cheese), Parmesan, egg, oregano, pepper, and nutmeg. Stir well.
Cut pastry – Roll out puff pastry and cut into 9–12 equal squares.
Assemble – Place 1–2 tbsp of filling in the center of each square. Fold corners slightly inward (or leave open for a rustic look).
Finish – Brush edges with egg wash. Sprinkle with sesame or nigella seeds if desired.
Bake – 15–20 minutes until puffed and golden brown.
