Tomato Spinach Chicken Spaghetti

Ingredients:
1 lb spaghetti
1 tbsp olive oil
1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
2 cloves garlic, minced
1 (14.5 oz) can diced tomatoes, undrained
5 oz fresh spinach, roughly chopped
1/4 cup chicken broth (optional, for thinning sauce)
1/4 cup grated Parmesan cheese, plus more for serving
1 tsp dried Italian seasoning
1/4 tsp red pepper flakes (optional, for a little heat)
Salt and freshly ground black pepper to taste
Fresh basil leaves, chopped (for garnish)
Instructions:
Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Reserve about 1/2 cup of the pasta water before draining. Drain the spaghetti and set aside.
Sauté the Chicken: While the pasta is cooking, heat the olive oil in a large skillet or Dutch oven over medium heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper.
Add Garlic and Tomatoes: Add the minced garlic to the skillet and cook for about 30 seconds until fragrant, being careful not to burn it. Stir in the undrained diced tomatoes, Italian seasoning, and red pepper flakes (if using). Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
Wilt the Spinach: Add the chopped spinach to the skillet and stir until it wilts down, which should take about 1-2 minutes.
Combine and Finish: Add the cooked spaghetti to the skillet with the chicken and tomato sauce. Toss to coat everything evenly. If the sauce seems too thick, add a little of the reserved pasta water or the chicken broth until you reach your desired consistency.
Stir in Parmesan: Stir in the 1/4 cup of grated Parmesan cheese. Taste and adjust seasoning with salt and pepper as needed.
Serve: Divide the spaghetti among plates or bowls. Garnish with extra grated Parmesan cheese and fresh basil leaves.
