Tuscan Salmon & Shrimp on Mashed Potatoes
π§Ύ Ingredients (Serves 3β4)
π Seafood
- 2 salmon fillets (skin on or off)
- 200g shrimp (peeled & deveined)
- Salt & black pepper (to taste)
- 1 tsp paprika
- 1 tsp garlic powder
- 1β2 tbsp olive oil
π₯ Mashed Potatoes
- 4 medium potatoes (peeled & cubed)
- 2β3 tbsp butter
- ΒΌ cup milk or cream
- Salt (to taste)
- Optional: 1 tbsp sour cream
π Tuscan Cream Sauce
- 2 tbsp butter
- 4 cloves garlic (minced)
- Β½ cup sun-dried tomatoes (chopped)
- 1Β½ cups heavy cream
- Β½ cup chicken broth (or water)
- 1 tsp Italian seasoning
- Β½ tsp chili flakes (optional)
- Β½ cup grated Parmesan
- 1β2 cups fresh spinach
πͺ Step 1: Make the Mashed Potatoes
- Boil potatoes in salted water for 15β20 minutes until soft
- Drain well
- Mash with:
- Butter
- Milk/cream
- Salt
π Mash until smooth and creamy (not grainy)
π Keep warm and set aside
π Step 2: Season & Sear the Salmon
- Pat salmon dry
- Season with:
- Salt
- Pepper
- Paprika
- Garlic powder
- Heat oil in a pan over medium-high heat
- Cook salmon:
- 3β4 minutes per side
π Remove and set aside (slightly undercooked is fineβit will finish in the sauce)
π€ Step 3: Cook the Shrimp
- In the same pan, add shrimp
- Cook for 1β2 minutes per side until pink
π Remove and set aside with salmon
π³ Step 4: Make the Tuscan Sauce
- In the same pan, melt butter
- Add garlic β sautΓ© for 30β60 seconds
- Add:
- Sun-dried tomatoes
- Italian seasoning
- Chili flakes (optional)
- Pour in:
- Chicken broth
- Heavy cream
- Stir and simmer for 3β5 minutes
π Sauce should slightly thicken
π§ Step 5: Finish the Sauce
- Add:
- Parmesan cheese
- Spinach
- Stir until:
- Spinach wilts
- Sauce becomes creamy and rich
π Taste and adjust salt & pepper
ππ€ Step 6: Combine Seafood with Sauce
- Return:
- Salmon
- Shrimp
- Spoon sauce over them
- Simmer on low for 2β3 minutes
