Ingredients:
1 cup all-purpose flour
1 tablespoon sugar substitute (like Stevia or monk fruit)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup fat-free Greek yogurt
2 large eggs
1 teaspoon vanilla extract
1 cup fresh blueberries
Instructions:
In a mixing bowl, combine the flour, sugar substitute, baking powder, baking soda, and salt.
In a separate bowl, whisk together the Greek yogurt, eggs, and vanilla extract until well combined.
Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
Gently fold in the fresh blueberries.
Preheat a non-stick griddle or skillet over medium heat.
Using a 1/4 cup measuring cup, pour the batter onto the griddle to form pancakes.
Cook until bubbles form on the surface of the pancakes, then flip and cook the other side until golden brown.
Continue until all the batter is used.
Serve the pancakes with additional fresh blueberries on top, and if desired, a drizzle of sugar-free maple syrup.
