Protein & Base
1 lb (450 g) 99% fat-free ground turkey (or very lean ground beef)
1 small onion, diced
3 cloves garlic, minced
Seasonings
1 packet taco seasoning (or homemade*)
1 packet ranch seasoning mix (dry)
Canned Goods
1 can (10 oz) Rotel (diced tomatoes with green chilies)
1 can (15 oz) black beans, drained & rinsed
1 can (15 oz) corn, drained
1 can (28 oz) crushed tomatoes or 2 cans (14.5 oz) diced tomatoes
Liquids & Creaminess
3 cups low-sodium chicken broth
1 cup plain nonfat Greek yogurt (WW-friendly creamy swap)
1–2 tbsp light cream cheese (optional for extra creaminess—adds a couple points)
Toppings (optional)
Chopped cilantro
Lime wedges
Reduced-fat shredded cheese
Baked tortilla strips or crushed tortilla chips (count points accordingly)
👩🍳 Instructions
1. Brown the Meat
In a large pot or Dutch oven, spray lightly with cooking spray.
Add ground turkey (or lean beef).
Cook until browned, breaking it apart with a spoon.
Add diced onion and garlic; cook 2–3 minutes until fragrant.
2. Add Seasonings & Vegetables
Stir in taco seasoning and ranch seasoning.
Add:
Rotel
Black beans
Corn
Crushed or diced tomatoes
Mix everything well.
3. Add Broth & Simmer
Pour in chicken broth.
Bring to a simmer and cook 10–15 minutes to blend flavors.
4. Make It Creamy (WW-Friendly Method)
Turn heat to low.
In a small bowl, mix 1 cup nonfat Greek yogurt with a ladle of hot soup to temper (prevents curdling).
Stir yogurt mixture into the soup until smooth.
Add light cream cheese if using; stir until melted.
5. Serve
Ladle soup into bowls. Garnish with cilantro, lime, or a sprinkle of reduced-fat cheese if desired.
🌟 Tips to Keep It WW-Friendly
Use 99% lean turkey → lowest points
Nonfat Greek yogurt replaces sour cream or heavy cream
Skip cheese or use 1 tbsp reduced-fat cheese per bowl
Use no-added-sugar tomatoes
Use low-sodium broth
🔥 Variations
Spicier: Add jalapeños or extra chili powder.
Creamier: Add 2–4 tbsp light cream cheese (adds points but still light).
Chunkier: Add extra vegetables like zucchini or bell peppers.
