🍲 White Chicken Chili
A creamy, comforting chili made with tender chicken, white beans, green chilies, and warm spices. It’s lighter than traditional chili but still rich and satisfying.

🛒 Ingredients
2 cups cooked shredded chicken (rotisserie chicken works well)
2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
1 small onion, diced
2 cloves garlic, minced
1 can (4 oz) diced green chilies
3 cups chicken broth
1 cup heavy cream or half-and-half
1 tbsp olive oil or butter
🌶 Spices
1 tsp ground cumin
1 tsp chili powder
½ tsp oregano
½ tsp salt (adjust to taste)
¼ tsp black pepper
👨🍳 Instructions
1️⃣ Sauté the aromatics
Heat olive oil in a large pot over medium heat.
Add onion and cook for 3–4 minutes until soft.
Stir in garlic and cook for 30 seconds until fragrant.
2️⃣ Add the base ingredients
Add to the pot:
shredded chicken
white beans
green chilies
chicken broth
cumin, chili powder, oregano, salt, and pepper
Stir well.
3️⃣ Simmer
Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes so the flavors combine.
4️⃣ Make it creamy
Stir in the heavy cream and cook for another 5 minutes.
For a thicker chili, mash some beans with a spoon or blend ½ cup of the chili and return it to the pot.

Using rotisserie chicken saves time and adds flavor.
