🛒 Ingredients

  • 2 large cucumbers (English or regular)
  • 2 cloves garlic, minced
  • 1–2 tbsp rice vinegar (or white vinegar)
  • 1 tbsp soy sauce (use low-sodium if preferred)
  • 1–2 tsp chili flakes (adjust heat)
  • 1 tsp sesame oil (optional — adds flavor but adds points if tracking strictly)
  • 1–2 tsp zero-calorie sweetener (like stevia/erythritol — optional)
  • Salt to taste
  • Fresh cilantro or green onions (optional garnish)

🥣 Instructions

1. Prep Cucumbers

  • Slice cucumbers into thin rounds or smash them lightly for a rustic texture
  • Sprinkle lightly with salt and let sit for 10 minutes
  • Drain excess water (this keeps them crunchy)

2. Make the “Bang” Sauce

In a bowl, mix:

  • Garlic
  • Vinegar
  • Soy sauce
  • Chili flakes
  • Sweetener (if using)
  • Sesame oil (optional)

3. Toss & Chill
