1 cup cottage cheese
2 large eggs

Step 1: Preheat & Prep
Preheat a non-stick skillet or frying pan over medium heat.
Step 2: Make the Batter
In a blender or mixing bowl, combine cottage cheese and eggs. Blend or whisk until smooth. Add a pinch of salt or herbs if desired.
Step 3: Cook the Tortillas
Pour a small amount of batter into the skillet and spread gently into a thin circle. Cook for 2–3 minutes, until the edges start to lift and the bottom is golden. Flip and cook the other side for 1–2 minutes.
Step 4: Serve & Enjoy
