🥩 Spiced Meat Filling
Ingredients
1 lb (450 g) ground beef or lamb (80/20 preferred)
1 small onion, finely grated
3 cloves garlic, minced
2 tbsp olive oil
2 tbsp tomato paste
1 tsp ground cumin
1 tsp smoked paprika
1 tsp ground coriander
½ tsp cinnamon
½ tsp allspice
½ tsp chili flakes (optional)
1 tsp salt
½ tsp black pepper
¼ cup chopped fresh parsley or cilantro
Instructions
Add all ingredients to a bowl.
Mix very thoroughly until pasty and well combined (this helps it stick to the bread).
Set aside while you prep the rest.
🫓 Flatbread Base
Ingredients
4 pita breads (cut in half)
or naan / Middle Eastern flatbreadOlive oil for brushing
🔥 Assemble & Cook
Option 1: Skillet (Best Crust)
Heat a cast-iron skillet over medium heat.
Brush one side of pita lightly with olive oil.
Spread a thin, even layer of meat mixture over the other side.
Place meat-side down in the hot skillet.
Cook 3–4 minutes until browned and sizzling.
Flip and cook bread side 1–2 minutes until lightly charred.
Repeat with remaining flatbreads.
Option 2: Oven
Preheat oven to 425°F (220°C).
Place flatbreads meat-side up on a baking sheet.
Bake 10–12 minutes, then broil 1–2 minutes for char.
🥛 Creamy Yogurt Sauce
Ingredients
1 cup Greek yogurt
1 tbsp lemon juice
1 tbsp olive oil
1 small garlic clove, grated
Salt to taste
Instructions
Mix everything until smooth and chill until serving.
🍅 Fresh Tomato Salad (On Top)
Ingredients
2 ripe tomatoes, diced
¼ red onion, finely chopped
2 tbsp chopped parsley or cilantro
Salt to taste
Optional: squeeze of lemon
Instructions
Toss together just before serving.

Spread warm flatbreads with yogurt sauce.
Spoon tomato salad generously on top.
Finish with extra herbs and cracked black pepper.
