Crispy Garlic Herb Roasted Potato Cubes
🛒 Ingredients (Serves 4)
2 lbs (900g) Yukon Gold or Russet potatoes
3 tbsp olive oil (or avocado oil)
3 cloves garlic, minced (or 1½ tsp garlic powder)
1 tsp paprika (smoked or sweet)
½ tsp onion powder
½ tsp black pepper
¾ tsp sea salt (adjust to taste)
1 tsp dried oregano or Italian seasoning
2 tbsp fresh parsley, finely chopped
Optional: ¼ tsp cayenne (for heat)
Optional: 2 tbsp grated Parmesan (for extra crispiness)
🔪 Step 1: Prep the Potatoes
Wash and scrub potatoes well (peel if desired, but skin adds texture).
Cut into even 1-inch cubes for uniform cooking.
Place cubes in a large bowl of cold water and soak for 20–30 minutes (removes excess starch → crispier texture).
💦 Step 2: Parboil for Extra Crispiness (Highly Recommended)
Drain potatoes and transfer to a pot.
Cover with salted water and bring to a boil.
Simmer for 5–7 minutes until slightly tender but not falling apart.
Drain thoroughly.
Let steam dry for 5–10 minutes (this helps rough edges form for crisping).
👉 Optional trick: Shake them gently in the colander to rough up the edges—that creates crispy ridges.
🌿 Step 3: Season
Preheat oven to 425°F (220°C).
In a large bowl, toss potatoes with:
Olive oil
Garlic
Paprika
Onion powder
Salt & pepper
Oregano
Cayenne (if using)
Make sure every cube is well coated.
🔥 Step 4: Roast
Line a large baking sheet with parchment paper.
Spread potatoes in a single layer (do not overcrowd).
Roast for 30–40 minutes, flipping halfway through.
Roast until deep golden brown and crispy on edges.
For extra crunch:
Broil for 2–3 minutes at the end (watch carefully).
🌿 Step 5: Finish & Serve
Remove from oven.
Toss with fresh parsley.
Sprinkle Parmesan if using.
Serve immediately while crispy.
🧊 Storage & Reheating
Store in airtight container up to 4 days.
Reheat in air fryer (375°F for 5–7 min) or oven (400°F for 8–10 min).
Avoid microwave (makes them soft).
🥔 Air Fryer Version
Preheat air fryer to 400°F (200°C).
Cook in batches for 15–18 minutes.
Shake basket halfway through.
