Crispy Garlic Herb Roasted Potato Cubes

🛒 Ingredients (Serves 4)

  • 2 lbs (900g) Yukon Gold or Russet potatoes

  • 3 tbsp olive oil (or avocado oil)

  • 3 cloves garlic, minced (or 1½ tsp garlic powder)

  • 1 tsp paprika (smoked or sweet)

  • ½ tsp onion powder

  • ½ tsp black pepper

  • ¾ tsp sea salt (adjust to taste)

  • 1 tsp dried oregano or Italian seasoning

  • 2 tbsp fresh parsley, finely chopped

  • Optional: ¼ tsp cayenne (for heat)

  • Optional: 2 tbsp grated Parmesan (for extra crispiness)


🔪 Step 1: Prep the Potatoes

  1. Wash and scrub potatoes well (peel if desired, but skin adds texture).

  2. Cut into even 1-inch cubes for uniform cooking.

  3. Place cubes in a large bowl of cold water and soak for 20–30 minutes (removes excess starch → crispier texture).


💦 Step 2: Parboil for Extra Crispiness (Highly Recommended)

  1. Drain potatoes and transfer to a pot.

  2. Cover with salted water and bring to a boil.

  3. Simmer for 5–7 minutes until slightly tender but not falling apart.

  4. Drain thoroughly.

  5. Let steam dry for 5–10 minutes (this helps rough edges form for crisping).

👉 Optional trick: Shake them gently in the colander to rough up the edges—that creates crispy ridges.


🌿 Step 3: Season

  1. Preheat oven to 425°F (220°C).

  2. In a large bowl, toss potatoes with:

  • Olive oil

  • Garlic

  • Paprika

  • Onion powder

  • Salt & pepper

  • Oregano

  • Cayenne (if using)

Make sure every cube is well coated.


🔥 Step 4: Roast

  1. Line a large baking sheet with parchment paper.

  2. Spread potatoes in a single layer (do not overcrowd).

  3. Roast for 30–40 minutes, flipping halfway through.

  4. Roast until deep golden brown and crispy on edges.

For extra crunch:

  • Broil for 2–3 minutes at the end (watch carefully).


🌿 Step 5: Finish & Serve

  1. Remove from oven.

  2. Toss with fresh parsley.

  3. Sprinkle Parmesan if using.

  4. Serve immediately while crispy.


🧊 Storage & Reheating

  • Store in airtight container up to 4 days.

  • Reheat in air fryer (375°F for 5–7 min) or oven (400°F for 8–10 min).

  • Avoid microwave (makes them soft).


🥔 Air Fryer Version

  • Preheat air fryer to 400°F (200°C).

  • Cook in batches for 15–18 minutes.

  • Shake basket halfway through.

Spicy Cajun: Add 1 tsp Cajun seasoning
Lemon Herb: Add lemon zest + squeeze of lemon after baking
