Ingredients:
- 1 1/2 cups sugar-free chocolate chips
- 1/2 cup unsweetened almond milk (or any other milk of your choice)
- 1/4 cup unsweetened cocoa powder
- 1/4 cup powdered erythritol (or any other sugar substitute)
- 1/4 cup light butter or margarine
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional, adjust for points)
Instructions:
- Line an 8-inch square baking pan with parchment paper.
- In a microwave-safe bowl, combine the sugar-free chocolate chips, almond milk, cocoa powder, powdered erythritol, and light butter.
- Microwave the mixture on high for 1 minute. Stir well.
- Continue microwaving in 15-30 second intervals, stirring each time, until the chocolate is fully melted and the mixture is smooth.
- Remove from the microwave and stir in the vanilla extract and chopped nuts (if using).
- Quickly transfer the fudge mixture to the prepared baking pan and spread it evenly.
- Place the pan in the refrigerator and let the fudge set for at least 2 hours.
- Once set, lift the parchment paper to remove the fudge from the pan. Cut into small squares.
