Home Made Healthy 5-Minute Fudge

Ingredients:

  • 1 1/2 cups sugar-free chocolate chips
  • 1/2 cup unsweetened almond milk (or any other milk of your choice)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered erythritol (or any other sugar substitute)
  • 1/4 cup light butter or margarine
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional, adjust for points)

Instructions:

  1. Line an 8-inch square baking pan with parchment paper.
  2. In a microwave-safe bowl, combine the sugar-free chocolate chips, almond milk, cocoa powder, powdered erythritol, and light butter.
  3. Microwave the mixture on high for 1 minute. Stir well.
  4. Continue microwaving in 15-30 second intervals, stirring each time, until the chocolate is fully melted and the mixture is smooth.
  5. Remove from the microwave and stir in the vanilla extract and chopped nuts (if using).
  6. Quickly transfer the fudge mixture to the prepared baking pan and spread it evenly.
  7. Place the pan in the refrigerator and let the fudge set for at least 2 hours.
  8. Once set, lift the parchment paper to remove the fudge from the pan. Cut into small squares.
