1 ¼ cups (160g) all-purpose flour
¼ tsp salt
8 tbsp (115g) unsalted butter, cold and cubed
3–4 tbsp ice water
🧀 Filling
6 oz (170g) brie cheese, sliced into small pieces
½ cup fresh or frozen cranberries
¼ cup toasted walnuts, roughly chopped
2 tbsp brown sugar or maple syrup (optional, for extra sweetness)
🍯 Hot Honey Drizzle
¼ cup honey
¼ tsp red pepper flakes (adjust to taste)

1 egg, beaten (for egg wash)
Powdered sugar for dusting (optional)

1️⃣ Make the Pastry
In a large bowl, mix flour and salt.
Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
Gradually add ice water, 1 tbsp at a time, until dough comes together.
Form into a disk, wrap in plastic, and refrigerate at least 30 minutes.
2️⃣ Prepare the Filling
Toast walnuts in a dry pan over medium heat for 3–5 minutes until fragrant.
If using frozen cranberries, thaw slightly and drain excess liquid.
Combine brie, cranberries, and walnuts in a bowl. Add brown sugar if desired.
3️⃣ Roll and Assemble the Galette
Preheat oven to 400°F (200°C).
Roll chilled dough into a 12-inch circle on a floured surface.
Transfer to a parchment-lined baking sheet.
Place filling in the center, leaving a 2-inch border.
Fold edges over the filling, pleating dough as you go.
Brush dough edges with beaten egg.

Bake 30–35 minutes until pastry is golden and crisp.
Remove from oven and let cool 5 minutes.
5️⃣ Make Hot Honey Drizzle
Warm honey in a small saucepan over low heat.
Stir in red pepper flakes.
Drizzle over the warm galette just before serving.

Slice galette into wedges.
