🛒 Ingredients
Blueberry Sauce
2 cups fresh or frozen blueberries
½ cup granulated sugar
1 tablespoon lemon juice
1 teaspoon lemon zest (optional)
Ice Cream Base
2 cups heavy cream
1 cup whole milk
¾ cup granulated sugar
4 large egg yolks
1 teaspoon vanilla extract
Pinch of salt
🔥 Instructions
1️⃣ Make the Blueberry Sauce
In a saucepan over medium heat, combine blueberries, sugar, and lemon juice.
Cook 8–10 minutes until berries burst and mixture thickens.
Blend until smooth (optional for smooth texture) or leave slightly chunky.
Let cool completely. Chill in refrigerator.
2️⃣ Prepare the Custard Base
In a saucepan, heat heavy cream and milk over medium heat until steaming (do not boil).
In a separate bowl, whisk egg yolks with sugar until pale and slightly thickened.
Slowly pour warm cream mixture into yolks while whisking (to temper).
Return mixture to saucepan and cook over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon (170–175°F / 77–80°C).
Remove from heat. Stir in vanilla and salt.
Strain if needed for extra smoothness.
Chill mixture at least 2–4 hours until very cold.
3️⃣ Combine & Churn
Stir chilled blueberry sauce into cold custard base.
Pour into ice cream maker.
Churn according to manufacturer instructions (about 20–25 minutes) until soft-serve consistency.
4️⃣ Freeze
Transfer to airtight container.
Freeze 3–4 hours until firm.
🍨 No-Churn Version (No Ice Cream Maker)
Replace custard base with:
2 cups heavy cream (whipped to stiff peaks)
1 can (14 oz) sweetened condensed milk
Fold blueberry sauce into condensed milk.
Gently fold in whipped cream.
Freeze 6 hours or overnight.

Use full-fat dairy for creaminess.
Chill base completely before churning.
Add a tablespoon of vodka to prevent iciness (optional).
For swirl effect, reserve some blueberry sauce and swirl it in after churning.
