Preparation Time: 15 minutes
Cooking Time: 35–45 minutes
Servings: 4

Ingredients

  • One big green cabbage

    Two teaspoons of olive oil

    One teaspoon of powdered garlic

    One-half teaspoon of paprika

Half a teaspoon of black pepper

1/4 tsp salt, or to taste

One cup of cheddar cheese, shredded

Half a cup of mozzarella cheese, shredded

Six pieces of fried bacon, crumbled

    One medium tomato, chopped finely

    Two chopped green onions

Two teaspoons of optional grated Parmesan cheese

One tablespoon of freshly chopped parsley, if desired

Step-by-Step Instructions

Step 1: Preheat the Oven

Set the oven temperature to 400°F, or 200°C. Line a baking sheet with parchment paper or prepare a large baking dish. To keep the cabbage from sticking, lightly coat the surface with olive oil.

The cabbage will start roasting right away and produce tender interiors with lightly browned rims if the oven is prepared beforehand.

Step 2: Prepare the Cabbage

Remove any damaged or loose outer leaves from the cabbage. Rinse the cabbage thoroughly under running water and pat it dry with a clean kitchen towel.

Place the cabbage on a cutting board and slice it into thick rounds, approximately 1–1½ inches thick. These slices are called cabbage steaks because they hold their shape during roasting.

Keep the core attached to each slice as much as possible. The core helps hold the cabbage layers together while cooking.

Step 3: Prepare the Seasoning

In a small bowl, combine the olive oil, garlic powder, paprika, black pepper, and salt. Mix thoroughly until the seasonings are evenly distributed.

Brush both sides of each cabbage slice with the seasoned olive oil. Make sure to coat the outer leaves and exposed surfaces so that every bite is flavorful.

For extra flavor, you can add a small pinch of onion powder or dried Italian herbs.

Step 4: Arrange the Cabbage Steaks

Arrange the seasoned cabbage slices in a single layer in your prepared baking dish. Leave a little space between the slices to allow hot air to circulate.

Avoid overlapping the cabbage, as this can cause it to steam rather than roast. If necessary, use two baking sheets.

Step 5: Roast Until Tender

Place the cabbage in the preheated oven and roast for approximately 25–30 minutes.

After about 15 minutes, carefully check the cabbage. If the edges are browning too quickly, reduce the oven temperature slightly or loosely cover the dish with foil.

The cabbage should become tender when pierced with a fork, while the edges develop a delicious golden-brown color.

Step 6: Prepare the Toppings

While the cabbage is roasting, cook the bacon in a skillet until crispy. Transfer it to a paper towel-lined plate to remove excess grease, then crumble it into small pieces.

Wash and dice the tomato, chop the green onions, and combine the cheddar and mozzarella cheeses in a bowl.

Preparing the toppings in advance makes the final steps quick and easy.

Step 7: Add the Cheese and Bacon

Remove the cabbage from the oven once it is nearly tender. Sprinkle the shredded cheddar and mozzarella evenly over each cabbage steak.

Add the crumbled bacon and diced tomatoes on top. Finish with a little Parmesan cheese if desired.

Return the dish to the oven and bake for another 8–12 minutes, or until the cheese melts completely and begins to turn golden.

Step 8: Add Fresh Garnishes

Remove the baking dish from the oven and allow the cabbage steaks to rest for approximately 3–5 minutes.

Sprinkle the chopped green onions and fresh parsley over the top. The fresh garnishes add color and a pleasant contrast to the rich cheese and smoky bacon.

Taste a small portion and add extra black pepper if desired.

Step 9: Serve and Enjoy

Carefully transfer the cabbage steaks to serving plates using a wide spatula. Serve them warm while the cheese is still melted and delicious.

These cheesy cabbage steaks pair wonderfully with grilled chicken, roasted beef, baked fish, or a fresh green salad. They can also be served as a satisfying vegetable main dish.

Tips for the Best Results

Choose a firm cabbage: A fresh, tightly packed cabbage holds together better when sliced and roasted.

Cut evenly: Similar-sized slices cook more evenly and are easier to serve.

Avoid excess moisture: Dry the cabbage thoroughly after washing to encourage browning.

Customize the toppings: Substitute turkey bacon, sautéed mushrooms, or roasted peppers according to your preferences. You can also use Monterey Jack or Gruyère cheese for a different flavor.

Store leftovers properly: Refrigerate leftover cabbage steaks in an airtight container for up to 3–4 days. Reheat them in an oven at 350°F (175°C) until heated through. The oven helps preserve their texture better than a microwave.
