A fresh, protein-packed Mediterranean salad with chickpeas, crisp vegetables, salty feta, and a bright lemon-herb dressing. It’s perfect as a light lunch, side dish, or meal prep salad.

Ingredients

Salad

  • 1 can (400 g / 15 oz) chickpeas, drained and rinsed

  • 1 cup cucumber, diced

  • 1 cup cherry tomatoes, halved

  • ¼ red onion, thinly sliced

  • ½ cup feta cheese, crumbled

  • ¼ cup Kalamata olives, sliced

  • 2 tablespoons fresh parsley, chopped

  • 1 tablespoon fresh dill (optional)


Lemon Herb Dressing

  • 3 tablespoons olive oil

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon lemon zest

  • 1 clove garlic, minced

  • 1 teaspoon Dijon mustard

  • ½ teaspoon dried oregano

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • ½ teaspoon honey (optional)


Instructions

1. Prepare the Vegetables

In a large bowl combine:

  • chickpeas

  • cucumber

  • cherry tomatoes

  • red onion

  • olives

  • parsley

  • dill


2. Make the Dressing

In a small bowl whisk together:

  • olive oil

  • lemon juice

  • lemon zest

  • minced garlic

  • Dijon mustard

  • oregano

  • salt and pepper

  • honey (optional)

Whisk until the dressing is well emulsified.


3. Assemble the Salad

  1. Pour the dressing over the chickpea mixture.

  2. Toss gently until everything is evenly coated.


4. Add Feta

Sprinkle crumbled feta cheese on top and lightly mix.


5. Serve

Serve immediately or chill for 20–30 minutes to allow the flavors to blend.


Optional Add-Ins

  • Avocado cubes

  • Roasted red peppers

  • Baby spinach or arugula

  • Quinoa for extra protein

Storage

  • Store in an airtight container in the refrigerator for 3 days.
