Healthy Pickled Beets Recipe

4 medium fresh beets
1 cup apple cider vinegar
1/2 cup water
1โ2 tbsp honey (or maple syrup)
1 tsp salt
1/2 tsp black peppercorns
1/2 tsp mustard seeds (optional)
1 small garlic clove (optional)
1 small cinnamon stick (optional, for warmth)

1. Cook the Beets
Wash and trim the beets (donโt peel yet).
Boil in water for 25โ35 minutes until fork-tender.
Let cool, then rub off skins and slice or cube.
2. Prepare Pickling Liquid
In a saucepan, combine:
vinegar
water
honey
salt
spices
Bring to a gentle simmer for 3โ5 minutes.
3. Pack the Jar
Place sliced beets into a clean glass jar.
Add garlic (if using).
4. Pour & Cool
Pour the hot pickling liquid over the beets.
Let cool to room temperature.
5. Refrigerate
Seal and refrigerate for at least 24 hours (best after 2โ3 days).
