Ingredients

Salmon

  • 1–1½ lbs salmon fillet, cut into portions
  • Salt and black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tbsp olive oil

Lemon Butter Sauce

  • 3 tbsp butter
  • 3 garlic cloves, minced
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp honey (optional for balance)
  • 1 tbsp chopped parsley or cilantro
  • Pinch chili flakes (optional)

Rice Base

  • 2 cups cooked jasmine or basmati rice
  • 1 tsp butter or olive oil (optional)
  • Salt to taste

Guacamole

  • 2 ripe avocados
  • 1 tbsp lime juice
  • ¼ tsp salt
  • 2 tbsp diced red onion
  • 1 small tomato, diced (optional)
  • 1 tbsp chopped cilantro
  • Pinch chili flakes (optional)

Fresh Pico de Gallo

  • 1 cup diced tomatoes
  • ¼ cup red onion, finely diced
  • 1–2 tbsp cilantro, chopped
  • 1 tbsp lime juice
  • Salt to taste
  • Optional: jalapeño, finely chopped

Instructions

1. Cook the rice

Prepare rice according to package instructions.

Fluff and keep warm.


2. Prepare guacamole

Mash avocados in a bowl.

Mix in:

  • lime juice
  • salt
  • onion
  • tomato (optional)
  • cilantro
  • chili flakes

Set aside.


3. Make pico de gallo

Combine:

  • tomatoes
  • onion
  • cilantro
  • lime juice
  • salt
  • optional jalapeño

Let sit to develop flavor.


4. Cook the salmon

Season salmon with:

  • salt
  • pepper
  • paprika
  • garlic powder

Heat olive oil in skillet over medium-high heat.

Cook salmon:

  • 3–5 minutes per side depending on thickness

Remove and set aside.


5. Make lemon butter sauce

In same pan melt butter.

Add garlic and sauté 30–60 seconds.

Stir in:

  • lemon juice
  • lemon zest
  • honey (optional)
  • chili flakes

Simmer 1–2 minutes.


6. Glaze salmon

Return salmon to pan.

Spoon lemon butter sauce over top until coated and glossy.

Sprinkle parsley or cilantro.


7. Assemble bowls

Layer:

  • rice base
  • lemon butter salmon
  • guacamole
  • pico de gallo

Optional toppings:

  • extra lime juice
  • hot sauce
  • fresh herbs
  • sesame seeds

Spicy Version

Add:

  • cayenne or hot sauce to salmon
  • jalapeño in pico

Swap guacamole for:
