Ingredients
For the Salad
- 1 romaine lettuce heart, chopped
- 3 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup roasted red peppers, sliced
- 1/2 cup pepperoncini peppers
- 1/2 cup Kalamata or black olives
- 1 cup mozzarella pearls or diced fresh mozzarella
- 4 oz salami, sliced into strips
- 4 oz ham or prosciutto, torn into pieces
- 1/4 cup shaved Parmesan cheese
Italian Dressing
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 garlic clove, minced
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
Instructions
- Prepare the vegetables
- Wash and chop the lettuce and vegetables.
- Arrange the salad
- In a large serving bowl or platter, layer lettuce and greens.
- Top with tomatoes, cucumber, onion, roasted peppers, olives, and pepperoncini.
- Add meats and cheese
- Arrange salami, ham/prosciutto, mozzarella, and Parmesan over the salad.
- Make the dressing
- Whisk together olive oil, vinegar, lemon juice, Dijon mustard, garlic, Italian seasoning, salt, and pepper.
- Serve
- Drizzle dressing over the salad just before serving and toss lightly.
