Italian Antipasto Salad

Ingredients

For the Salad

  • 1 romaine lettuce heart, chopped
  • 3 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup roasted red peppers, sliced
  • 1/2 cup pepperoncini peppers
  • 1/2 cup Kalamata or black olives
  • 1 cup mozzarella pearls or diced fresh mozzarella
  • 4 oz salami, sliced into strips
  • 4 oz ham or prosciutto, torn into pieces
  • 1/4 cup shaved Parmesan cheese

Italian Dressing

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste

Instructions

  1. Prepare the vegetables
    • Wash and chop the lettuce and vegetables.
  2. Arrange the salad
    • In a large serving bowl or platter, layer lettuce and greens.
    • Top with tomatoes, cucumber, onion, roasted peppers, olives, and pepperoncini.
  3. Add meats and cheese
    • Arrange salami, ham/prosciutto, mozzarella, and Parmesan over the salad.
  4. Make the dressing
    • Whisk together olive oil, vinegar, lemon juice, Dijon mustard, garlic, Italian seasoning, salt, and pepper.
  5. Serve
    • Drizzle dressing over the salad just before serving and toss lightly.
