Cheesy Vegetable Patties

Ingredients
- 2 cups zucchini, finely grated
- 1 cup carrot, finely grated
- ½ cup green bell pepper, finely diced
- 1½ cups mozzarella cheese, shredded
- 2 large eggs
- ½ cup breadcrumbs (or oat flour)
- 2 tbsp grated Parmesan cheese (optional)
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp paprika
- 2 tbsp olive oil for frying
Instructions
1. Prepare the Vegetables
- Grate the zucchini and place it in a clean kitchen towel.
- Squeeze out as much moisture as possible.
- Grate the carrot and finely dice the bell pepper.
2. Make the Mixture
- In a large bowl, combine zucchini, carrot, bell pepper, mozzarella, eggs, breadcrumbs, Parmesan, green onions, garlic, salt, pepper, and paprika.
- Mix until everything is evenly combined.
- If the mixture feels too wet, add 1–2 extra tablespoons of breadcrumbs.
3. Shape the Patties
- Take about 2 tablespoons of mixture.
- Form into oval or cylindrical patties similar to those shown in the picture.
- Place on a plate.
4. Cook
- Heat olive oil in a large non-stick skillet over medium heat.
- Add patties without overcrowding the pan.
- Cook for 3–4 minutes per side until golden brown and cooked through.
- Transfer to a paper towel-lined plate.
5. Serve
Serve warm with:
- Garlic yogurt sauce
- Tzatziki
- Ranch dressing
- Marinara sauce
- Sweet chili sauce
Garlic Yogurt Dip (Optional)
Ingredients
- ½ cup Greek yogurt
- 1 garlic clove, minced
- 1 tsp lemon juice
- Pinch of salt
Directions
Mix all ingredients together and chill for 10 minutes before serving.
