Cheesy Vegetable Patties

Ingredients

  • 2 cups zucchini, finely grated
  • 1 cup carrot, finely grated
  • ½ cup green bell pepper, finely diced
  • 1½ cups mozzarella cheese, shredded
  • 2 large eggs
  • ½ cup breadcrumbs (or oat flour)
  • 2 tbsp grated Parmesan cheese (optional)
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp paprika
  • 2 tbsp olive oil for frying

Instructions

1. Prepare the Vegetables

  1. Grate the zucchini and place it in a clean kitchen towel.
  2. Squeeze out as much moisture as possible.
  3. Grate the carrot and finely dice the bell pepper.

2. Make the Mixture

  1. In a large bowl, combine zucchini, carrot, bell pepper, mozzarella, eggs, breadcrumbs, Parmesan, green onions, garlic, salt, pepper, and paprika.
  2. Mix until everything is evenly combined.
  3. If the mixture feels too wet, add 1–2 extra tablespoons of breadcrumbs.

3. Shape the Patties

  1. Take about 2 tablespoons of mixture.
  2. Form into oval or cylindrical patties similar to those shown in the picture.
  3. Place on a plate.

4. Cook

  1. Heat olive oil in a large non-stick skillet over medium heat.
  2. Add patties without overcrowding the pan.
  3. Cook for 3–4 minutes per side until golden brown and cooked through.
  4. Transfer to a paper towel-lined plate.

5. Serve

Serve warm with:

  • Garlic yogurt sauce
  • Tzatziki
  • Ranch dressing
  • Marinara sauce
  • Sweet chili sauce

Garlic Yogurt Dip (Optional)

Ingredients

  • ½ cup Greek yogurt
  • 1 garlic clove, minced
  • 1 tsp lemon juice
  • Pinch of salt

Directions

Mix all ingredients together and chill for 10 minutes before serving.
