📝 Ingredients

For the Vegetable Base

  • 3 medium zucchini, grated
  • 2 medium carrots, grated
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp chopped parsley
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste

For the Batter

  • 3 large eggs
  • 1 cup (240 ml) milk
  • 1 cup (125 g) all-purpose flour
  • 1 tsp baking powder
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp melted butter or olive oil

👩‍🍳 Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grate the zucchini and sprinkle with a little salt. Let sit for 10 minutes, then squeeze out as much moisture as possible using a clean towel.
  3. In a large bowl, combine the grated zucchini, carrots, onion, garlic, parsley, Italian seasoning, salt, and pepper.
  4. In a separate bowl, whisk together the eggs, milk, melted butter, flour, baking powder, and Parmesan until smooth.
  5. Fold the shredded mozzarella into the batter.
  6. Spread the vegetable mixture evenly into a parchment-lined or greased 9×13-inch baking dish.
  7. Pour the batter evenly over the vegetables and gently spread to cover.
  8. Bake for 40–45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  9. Let cool for 10 minutes, then slice into squares and serve warm.
