Baked Salmon with Feta & Sun-Dried Tomatoes

Ingredients

  • 4 salmon fillets, about 6 oz (170 g) each
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup crumbled feta cheese
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven: Heat oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
  2. Season the salmon: Pat the salmon dry and place the fillets skin-side down in the baking dish. Drizzle with olive oil and season with salt, pepper, paprika, oregano, and Italian seasoning.
  3. Add the toppings: Sprinkle the minced garlic and chopped sun-dried tomatoes over the salmon. Top generously with crumbled feta.
  4. Bake: Bake for 15–20 minutes, depending on the thickness of the fillets, until the salmon flakes easily with a fork and reaches about 145°F (63°C) internally.
  5. Finish: Remove from the oven and drizzle with fresh lemon juice. Sprinkle with lemon zest, parsley, and basil.
  6. Serve: Serve immediately with lemon wedges and spoon some of the flavorful juices and sun-dried tomatoes over each fillet.

🍋 Serving Suggestions

Serve with roasted potatoes, steamed broccoli, asparagus, quinoa, couscous, or a Mediterranean salad.

Tip: For extra flavor, use sun-dried tomatoes packed in olive oil and reserve a teaspoon of their oil to drizzle over the salmon before baking.
