Baked Salmon with Feta & Sun-Dried Tomatoes

Ingredients
- 4 salmon fillets, about 6 oz (170 g) each
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- ½ cup crumbled feta cheese
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- ½ teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh basil, chopped
- Lemon wedges, for serving
Instructions
- Preheat the oven: Heat oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
- Season the salmon: Pat the salmon dry and place the fillets skin-side down in the baking dish. Drizzle with olive oil and season with salt, pepper, paprika, oregano, and Italian seasoning.
- Add the toppings: Sprinkle the minced garlic and chopped sun-dried tomatoes over the salmon. Top generously with crumbled feta.
- Bake: Bake for 15–20 minutes, depending on the thickness of the fillets, until the salmon flakes easily with a fork and reaches about 145°F (63°C) internally.
- Finish: Remove from the oven and drizzle with fresh lemon juice. Sprinkle with lemon zest, parsley, and basil.
- Serve: Serve immediately with lemon wedges and spoon some of the flavorful juices and sun-dried tomatoes over each fillet.

Serve with roasted potatoes, steamed broccoli, asparagus, quinoa, couscous, or a Mediterranean salad.
Tip: For extra flavor, use sun-dried tomatoes packed in olive oil and reserve a teaspoon of their oil to drizzle over the salmon before baking.
