Creamy Spinach & Cheese Stuffed Cauliflower
A delicious low-carb side dish made with a whole cauliflower stuffed with creamy spinach, cream cheese, mozzarella, and Parmesan, then baked until golden and bubbly.
Ingredients
For the cauliflower
- 1 large head cauliflower
- 2 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
For the creamy spinach filling
- 2 cups fresh spinach, chopped
- 4 oz (115 g) cream cheese, softened
- ½ cup shredded mozzarella
- ¼ cup grated Parmesan
- 2 cloves garlic, minced
- 2 tbsp heavy cream
- ½ tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp black pepper
For topping
- ½ cup shredded mozzarella
- 2 tbsp Parmesan
- Fresh parsley, optional
Instructions
- Preheat the oven to 400°F (200°C).
- Remove the leaves and trim the tough bottom of the cauliflower, keeping the head intact.
- Carefully cut a small cavity into the center of the cauliflower without cutting all the way through.
- Steam or boil the cauliflower for 8–10 minutes, just until it begins to soften. Drain very well.
- Heat a skillet over medium heat. Add a little olive oil and sauté the garlic for about 30 seconds.
- Add the chopped spinach and cook until wilted. Remove from heat.
- Mix the spinach with cream cheese, mozzarella, Parmesan, heavy cream, Italian seasoning, salt, and pepper until creamy. Creamy spinach mixtures commonly combine spinach with cream, Parmesan, and mozzarella before baking.
- Carefully spoon the filling into the center of the cauliflower, pressing gently so it reaches the inside.
- Rub the outside of the cauliflower with olive oil, salt, pepper, and garlic powder.
- Place it in a greased baking dish.
- Sprinkle the remaining mozzarella and Parmesan over the top.
- Cover loosely with foil and bake for 25 minutes.
- Remove the foil and bake for another 15–20 minutes, until the cauliflower is tender and the cheese is golden and bubbly.
- Let it rest for 5 minutes, then garnish with fresh parsley.
- Slice into wedges and serve warm. 🥦🧀🌿
Tip: Make sure the spinach is well drained; excess moisture can make the creamy filling watery.
