Creamy Spinach & Cheese Stuffed Cauliflower

A delicious low-carb side dish made with a whole cauliflower stuffed with creamy spinach, cream cheese, mozzarella, and Parmesan, then baked until golden and bubbly.

Ingredients

For the cauliflower

  • 1 large head cauliflower
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder

For the creamy spinach filling

  • 2 cups fresh spinach, chopped
  • 4 oz (115 g) cream cheese, softened
  • ½ cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 2 cloves garlic, minced
  • 2 tbsp heavy cream
  • ½ tsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp black pepper

For topping

  • ½ cup shredded mozzarella
  • 2 tbsp Parmesan
  • Fresh parsley, optional

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Remove the leaves and trim the tough bottom of the cauliflower, keeping the head intact.
  3. Carefully cut a small cavity into the center of the cauliflower without cutting all the way through.
  4. Steam or boil the cauliflower for 8–10 minutes, just until it begins to soften. Drain very well.
  5. Heat a skillet over medium heat. Add a little olive oil and sauté the garlic for about 30 seconds.
  6. Add the chopped spinach and cook until wilted. Remove from heat.
  7. Mix the spinach with cream cheese, mozzarella, Parmesan, heavy cream, Italian seasoning, salt, and pepper until creamy. Creamy spinach mixtures commonly combine spinach with cream, Parmesan, and mozzarella before baking.
  8. Carefully spoon the filling into the center of the cauliflower, pressing gently so it reaches the inside.
  9. Rub the outside of the cauliflower with olive oil, salt, pepper, and garlic powder.
  10. Place it in a greased baking dish.
  11. Sprinkle the remaining mozzarella and Parmesan over the top.
  12. Cover loosely with foil and bake for 25 minutes.
  13. Remove the foil and bake for another 15–20 minutes, until the cauliflower is tender and the cheese is golden and bubbly.
  14. Let it rest for 5 minutes, then garnish with fresh parsley.
  15. Slice into wedges and serve warm. 🥦🧀🌿

Tip: Make sure the spinach is well drained; excess moisture can make the creamy filling watery.
