Perfect Beef Fried Rice

Ingredients
- 3 cups cold, day-old cooked rice
- 1 lb (450 g) ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (carrots, peas, and corn)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- Salt and black pepper, to taste
- Green onions or sesame seeds, for garnish
Instructions
- Prepare the rice: Break up the cold rice with a fork so the grains are separated.
- Cook the beef: Heat 1 tbsp vegetable oil in a large wok or skillet over high heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Season with a little salt and pepper, then remove from the pan.
- Cook the vegetables: Add the remaining oil. Sauté the onion and garlic for 1–2 minutes until fragrant. Add the mixed vegetables and stir-fry until tender-crisp.
- Add beef and rice: Return the cooked beef to the pan. Add the rice and stir-fry for 2–3 minutes.
- Add the sauces: Pour in the soy sauce, oyster sauce, and sesame oil. Toss everything together until the rice is evenly coated and heated through.
- Finish: Taste and adjust the seasoning. Garnish with green onions or sesame seeds and serve hot.
Tip: Cold, day-old rice works best because it keeps the fried rice from becoming mushy.
