Creamy white beans tossed with garlic, lemon, fresh herbs, sun-dried tomatoes, capers, and olive oil. This makes a fresh Mediterranean side dish, light lunch, or topping for toasted bread. Ingredients
2 cans (15 oz each) cannellini or Great Northern beans, drained and rinsed
⅓ cup extra-virgin olive oil
3 cloves garlic, minced
½ small red onion or shallot, finely diced
½ cup roasted red peppers, chopped
⅓ cup sun-dried tomatoes, chopped
¼ cup Kalamata olives, sliced
2 tbsp capers, drained
1 lemon, zested and juiced
2 tbsp balsamic vinegar
½ cup fresh parsley, chopped
2 tbsp fresh basil, chopped
1 tsp dried oregano
½ tsp dried dill
½ tsp red pepper flakes, optional
½ tsp salt, or to taste
½ tsp freshly ground black pepper
½ cup crumbled feta cheese, optional
Instructions
Prepare the beans: Drain and rinse the beans thoroughly. Pat them gently dry so the marinade coats them well.
Sauté the aromatics: Heat 1 tablespoon of the olive oil in a skillet over medium heat. Add the red onion and garlic. Cook for 2–3 minutes, just until softened and fragrant.
Make the marinade: In a large bowl, whisk together the remaining olive oil, lemon zest, lemon juice, balsamic vinegar, oregano, dill, salt, black pepper, and red pepper flakes.
Add the vegetables: Stir in the sautéed onion and garlic, roasted red peppers, sun-dried tomatoes, olives, and capers.
Add the beans: Gently fold in the white beans, making sure they are well coated without crushing them.
Add the herbs: Stir in the fresh parsley and basil.
Marinate: Cover and refrigerate for at least 30 minutes. For even better flavor, let the beans marinate for 2 hours or overnight.
Finish: Bring to room temperature before serving. Gently fold in the feta, if using, and drizzle with a little extra olive oil.
