The original recipe uses a 3½–4-pound boneless pork loin, along with potatoes, carrots, and onions, and roasts everything at 375°F until the pork reaches 145°F internally.

It’s the kind of dinner I make when I’m craving something hearty and comforting without wanting a complicated recipe.

  • 3½–4 lb boneless pork loin roast

How to Make Garlic Herb Roasted Pork

1. Prepare the pork

Start by trimming away any very thick pieces of surface fat. Pat the pork dry with paper towels.

This little step helps the seasoning stick to the meat and encourages better browning.

2. Make the herb seasoning

In a small bowl, combine the brown sugar, ginger, cumin, garlic powder, onion powder, mustard, thyme, marjoram, cayenne, and crushed red pepper.

Rub the mixture generously all over the pork.

If you have time, cover the seasoned pork and refrigerate it for 1–2 hours. This gives the flavors a little time to settle into the meat.

3. Give the pork a good sear

Heat the olive oil in a large skillet or Dutch oven over medium-high heat.

Sear the pork on all sides until beautifully golden brown.

Don’t rush this part. That browned exterior adds so much flavor to the finished roast.

4. Add the vegetables

Place the pork in a roasting pan and arrange the potatoes, carrots, and onions around it.

I love this part because you essentially have your main dish and your side dishes cooking together.

5. Make the glaze

While the pork is roasting, melt the butter in a small saucepan.

Add the minced garlic and cook for about a minute, just until fragrant.

Stir in the juice, honey, mustard, soy sauce, ketchup, vinegar, and ginger. Season lightly with salt and pepper.

Let the mixture simmer for about 2–3 minutes. It should smell absolutely incredible.

6. Roast and baste

Roast the pork at 375°F (190°C).

Baste it with the glaze every 15–20 minutes as it cooks. The glaze will gradually build into a gorgeous, sticky coating.

Use an instant-read thermometer rather than relying only on cooking time. Pork loin is best removed when the center reaches 145°F (63°C).

7. Let it rest

This is the part I used to be impatient about!

Once the pork is finished, transfer it to a cutting board and loosely cover it with foil. Let it rest for about 15 minutes before slicing.

That short wait makes a difference—the juices have time to redistribute instead of running all over the cutting board.

Then slice the pork and arrange it alongside the roasted vegetables.


My Tips for the Best Roasted Pork

Don’t skip the searing. It gives the pork that beautiful browned exterior and adds another layer of flavor.

Use a thermometer. Pork loin can go from juicy to dry if it’s overcooked. Checking the internal temperature is much more reliable than guessing based on the clock.

Let it rest. I know it’s tempting to slice immediately, especially when everyone is hungry, but give the roast those few minutes.

Don’t drown the vegetables in glaze. A little goes a long way. Let some of the glaze stay on the pork so it caramelizes beautifully.

Change up the vegetables. Sweet potatoes, parsnips, Brussels sprouts, or apples would also be lovely additions.


What to Serve With Garlic Herb Pork

Honestly, the potatoes, carrots, and onions already make this a pretty complete meal.

But if I’m serving it for a larger family dinner, I’ll usually add:

  • Steamed green beans
  • Homemade dinner rolls
  • Creamy mashed potatoes
  • Roasted Brussels sprouts

And if there’s extra glaze left in the pan, save it. Spoon a little over the sliced pork just before serving.


What to Do With Leftover Pork
