savory Spinach and White Beans skillet

Spinach and White Beans

Ingredients

2 cups chopped fresh spinach
1 can white beans (15 oz), drained and rinsed
2 tablespoons olive oil
3 cloves garlic, minced
½ small onion, diced
Seasonings & Flavor
½ teaspoon salt, or to taste
½ teaspoon black pepper
½ teaspoon dried oregano
¼ teaspoon red pepper flakes (optional)
1 tablespoon lemon juice
2 tablespoons fresh parsley, chopped
Optional Additions
¼ cup crumbled feta cheese
½ cup cherry tomatoes, halved
Grated Parmesan cheese
A drizzle of extra virgin olive oil
Step-by-Step Instructions
Prepare the Ingredients
Drain and rinse the white beans thoroughly under cold water. Chop the spinach and dice the onion. Mince the garlic so it releases maximum flavor while cooking.
Sauté the Onion and Garlic
Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 3–4 minutes until softened and slightly golden. Add minced garlic and cook for another 30 seconds until fragrant.
Add the White Beans
Stir the drained white beans into the skillet. Cook for 3–5 minutes, allowing the beans to warm and absorb the garlic and onion flavors.
Add the Spinach
Add the chopped spinach gradually, stirring until it wilts down. Fresh spinach cooks quickly and should become tender while maintaining its bright flavor.
Season the Dish
Add salt, black pepper, oregano, and red pepper flakes if using. Stir everything together and allow the flavors to combine for another 2–3 minutes.
Finish with Fresh Flavor
Remove from heat and add lemon juice and fresh parsley. The lemon brightens the dish and balances the richness of the olive oil and beans.
Serve
Transfer to a serving bowl and top with feta cheese, Parmesan, or an extra drizzle of olive oil if desired. Serve warm with crusty bread, rice, or your favorite protein.
