Peels from 4–6 potatoes (Russet or Yukon Gold work best)
1–2 tablespoons olive oil (or avocado oil)
½ teaspoon salt (adjust to taste)
½ teaspoon paprika
¼ teaspoon garlic powder
¼ teaspoon black pepper
Optional seasonings (choose any):
Onion powder
Chili powder or cayenne (tiny pinch)
Italian seasoning
Parmesan cheese (add after cooking)

Wash the peels well
Scrub potatoes thoroughly before peeling. Pat the peels dry with a paper towel.Season
Put peels in a bowl. Add oil, salt, paprika, garlic powder, and pepper. Toss until evenly coated.Preheat air fryer
Preheat to 375°F (190°C) for about 3 minutes.Air fry
Place peels in the air fryer basket in a single layer (don’t overcrowd).
Cook for 8–12 minutes, shaking the basket halfway through.
They’re done when crispy and golden brown.
Taste & finish
Add extra salt or toppings if desired. Serve immediately.
