Air Fryer Jacket Potatoes (Serves 2)

Ingredients

  • 2 medium–large baking potatoes (Russet or Maris Piper work best)

  • 1–2 tbsp olive oil

  • ½ tsp salt (plus more for serving)

  • Optional toppings:

    • Butter

    • Cheese (cheddar, mozzarella, etc.)

    • Sour cream or yogurt

    • Baked beans

    • Tuna mayo

    • Spring onions


Equipment

  • Air fryer

  • Fork

  • Knife


Method

1. Prep the Potatoes

  1. Wash the potatoes well (scrub the skins).

  2. Dry them completely with a towel.

  3. Use a fork to prick each potato 6–8 times (important so they don’t burst).

2. Oil & Season

  1. Rub each potato with olive oil.

  2. Sprinkle all over with salt.

3. Air Fry

  1. Place potatoes in the air fryer basket (don’t stack).

  2. Cook at 200°C (390°F) for 40–45 minutes.

  3. Turn them over halfway through cooking.

👉 They’re ready when:

  • A knife slides easily into the center

  • The skin feels crispy

4. Fluff the Inside

  1. Cut a cross on top of each potato.

  2. Gently squeeze the ends to fluff the inside.

  3. Add a little butter and salt.


Add Toppings

Top however you like, for example:

  • Cheese + beans

  • Butter + cheese

  • Tuna mayo + sweetcorn

  • Sour cream + spring onions


Tips for Best Results

  • Bigger potatoes may need 5–10 extra minutes

  • For extra crispy skin:
    → Cook 5 more minutes after adding a little extra oil

  • If short on time:
    → Microwave potatoes for 5–7 minutes first, then air fry 15–20 minutes
