A creamy, healthy chicken salad made with ripe avocado instead of heavy mayonnaise. It’s fresh, high in protein, and perfect for sandwiches, wraps, or lettuce cups.
Ingredients (Serves 2–3)
2 cups cooked chicken breast, shredded or diced
1 large ripe avocado
1 tablespoon lemon juice or lime juice
2 tablespoons Greek yogurt (optional for extra creaminess)
¼ cup celery, finely chopped
¼ cup red onion, finely chopped
2 tablespoons fresh cilantro or parsley, chopped
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
Optional Add-ins
¼ cup cherry tomatoes, halved
1 tablespoon sunflower seeds or pumpkin seeds
¼ teaspoon chili flakes
¼ cup diced cucumber
Instructions
1. Prepare the Avocado Dressing
In a bowl mash the avocado with a fork until creamy.
Add lemon juice, Greek yogurt (if using), garlic powder, salt, and pepper.
Mix until smooth.
2. Combine the Salad
Add the shredded chicken to the bowl.
Mix in celery, red onion, and chopped herbs.
Stir gently until the chicken is evenly coated with the avocado mixture.
3. Adjust Seasoning
Taste and add extra salt, pepper, or lemon juice if needed.
