Creamy avocado, salty feta, juicy tomatoes, sweet cranberries, and crunchy walnuts layered over crispy toast — perfect for breakfast, brunch, or a light lunch.
🛒 Ingredients (Serves 2–3)
2–3 slices thick-cut sourdough, whole grain, or artisan bread
1 large ripe avocado
1 tbsp fresh lemon juice
¼ tsp salt (adjust to taste)
⅛ tsp black pepper

¼ cup crumbled feta cheese
½ cup cherry tomatoes, halved
2 tbsp dried cranberries (roughly chopped if large)
¼ cup walnuts, toasted and chopped
1 tsp honey (optional, for drizzle)
Optional: red pepper flakes or balsamic glaze

1️⃣ Toast the Bread
Toast bread until golden and crisp.
For extra crunch, brush lightly with olive oil before toasting.
2️⃣ Prepare the Avocado
Mash avocado in a bowl with lemon juice, salt, and pepper.
Keep slightly chunky for better texture.
3️⃣ Toast the Walnuts
In a dry skillet over medium heat, toast walnuts for 3–5 minutes until fragrant.
Let cool slightly before chopping.
