Step-by-Step Instructions
1️⃣ Prepare the Dough
In a large bowl, combine warm milk, warm water, sugar, and yeast. Let sit 5 minutes until slightly foamy.
Add oil, egg white, and salt. Mix.
Gradually add flour, mixing until a soft dough forms.
Knead 8–10 minutes until smooth and slightly tacky (not sticky).
Cover and let rise 1 hour, or until doubled in size.
2️⃣ Prepare the Filling
In a bowl, mix feta, mozzarella, parsley, dill, and pepper.
Set aside.
3️⃣ Shape the Buns
Punch down dough and divide into 10–12 equal pieces.
Roll each into a ball.
Flatten into a small circle (about 4 inches wide).
Place 1–2 tablespoons of filling in the center.
Fold edges over and seal tightly.
Flip seam-side down and gently shape into oval or twisted roll (like in the photo).
Place on a lined baking sheet.
4️⃣ Second Rise
Cover loosely and let rest 20–30 minutes.
5️⃣ Brush & Bake
Preheat oven to 375°F (190°C).
Mix egg yolk with 1 tbsp milk.
Brush tops generously for that deep golden shine.
Sprinkle sesame or nigella seeds if desired.
Bake 18–22 minutes until golden brown.

Brush with a little melted butter immediately after baking.
