Step-by-Step Instructions

1️⃣ Prepare the Dough

  1. In a large bowl, combine warm milk, warm water, sugar, and yeast. Let sit 5 minutes until slightly foamy.

  2. Add oil, egg white, and salt. Mix.

  3. Gradually add flour, mixing until a soft dough forms.

  4. Knead 8–10 minutes until smooth and slightly tacky (not sticky).

  5. Cover and let rise 1 hour, or until doubled in size.


2️⃣ Prepare the Filling

  1. In a bowl, mix feta, mozzarella, parsley, dill, and pepper.

  2. Set aside.


3️⃣ Shape the Buns

  1. Punch down dough and divide into 10–12 equal pieces.

  2. Roll each into a ball.

  3. Flatten into a small circle (about 4 inches wide).

  4. Place 1–2 tablespoons of filling in the center.

  5. Fold edges over and seal tightly.

  6. Flip seam-side down and gently shape into oval or twisted roll (like in the photo).

Place on a lined baking sheet.


4️⃣ Second Rise

  • Cover loosely and let rest 20–30 minutes.


5️⃣ Brush & Bake

  1. Preheat oven to 375°F (190°C).

  2. Mix egg yolk with 1 tbsp milk.

  3. Brush tops generously for that deep golden shine.

  4. Sprinkle sesame or nigella seeds if desired.

  5. Bake 18–22 minutes until golden brown.


🔥 For Extra Shine

Brush with a little melted butter immediately after baking.

  • Store covered at room temperature for 1 day

  • Refrigerate up to 4 days

  • Freeze up to 2 months

  • Reheat in oven at 300°F for 8–10 minutes
