Avocado Veggie Patties 🥑🥕🌿
Soft on the inside and lightly crispy outside, these patties are healthy, filling, and perfect for burgers, wraps, or snacks.
Ingredients
2 ripe avocados
½ cup grated carrot
¼ cup finely chopped onion
½ cup breadcrumbs (or oats)
2 tbsp chopped cilantro or parsley
1 clove garlic, minced
½ tsp cumin powder
½ tsp black pepper
Salt to taste
1–2 tbsp lemon juice
2–3 tbsp oil (for frying)
Optional:
¼ cup sweet corn
¼ cup grated zucchini
Instructions
1️⃣ Prepare the mixture
Mash the avocados in a bowl until mostly smooth.
Add carrot, onion, garlic, herbs, and corn (if using).
Mix in breadcrumbs, lemon juice, cumin, salt, and pepper.
2️⃣ Shape the patties
Form the mixture into small round patties.
If the mixture feels too soft, add a little more breadcrumbs.
3️⃣ Cook
Pan-fry method:
Heat oil in a pan over medium heat.
Cook patties 3–4 minutes per side until golden.
Baked option:
Bake at 200°C (400°F) for 15–20 minutes, flipping halfway.

Chilling the patties in the fridge for 15–20 minutes before cooking helps them hold together better.
